How to make Fantastic Recipe of Turkey on Crumbs / Persheshi Special me Gjel Deti – Recete nga Nena XHENI

I love this traditional Albanian recipe and Grandma Xheni is always so kind to cook it for me. She has her own way of cooking it, and it comes out so delicious. I thought to share her recipe with you today, so here I go: / Persheshi tradicional me gjel deti eshte nje nga gatimet qe me pelqen shume, ndaj nena Xheni nuk perton asnjehere ta gatuaje per mua dhe anetaret e tjere te familjes. Ajo ka nje menyre te veten se si e gatuan persheshin me gjel deti, dhe e ben ate shume te shijshem. Sot, mendova ta ndajme me ju receten e Nena Xhenit per persheshin, ndaj pa humbur kohe po filloj me receten:

Turkey / Gjel deti /el pavo

500 gr corn flour / 500 gr miell misri / 500 gr de harina de maiz

3 – 4 soup spoons of wheat flour / 3 – 4 luge supe miell gruri / 3 – 4 cucharadas de harina de trigo

2 average yellow onions / 2 qepe mesatare / 2 cebollas promedio

1/2 package baking powder / 1/2 pakete fryres brumerash (jo maja) /1/2 paquete de polvo de hornear

spearmint / nenexhik / la menta verde

salt, pepper, olive oil / kripe, piper, vaj ulliri / sal, pimienta, aceite de oliva

Start with the preparation of the turkey. The tradition asks to use one full turkey for preparation of this recipe, but it is very good even with pieces of turkey you may buy in the shop. Clean the onions and chop them in small cubicles. Fry them in warm olive oil until shrivel up. Add the turkey pieces in the pan. / Fillohet me gatimin e mishit te gjelit te detit. Me e mira eshte qe persheshi te behet me nje gjel deti te plote, por behet shume i mire edhe me pjese te tij, qe shiten neper dyqane. Ne kete menyre ju mund ta gatuani kete pjate ne cdo kohe te vitit. I pastrojme qepet dhe i presin ne copa te vogla. I skuqim me vaj ulliri derisa te vyshken. Shtojme ne tenxhere copat e mishit te gjelit te detit.

Freír las cebollas picadas hasta que estén arrugadas. Añadir los trozos de pavo.

Fry the meat until is golden on the sides. Add 1.5 liter of cold water, regulate with salt and pepper. Let it simmer until the meat is cooked. /I kavardisim mire copat e mishit derisa te marrin ngjyren e arte ne anet e tyre. Shtojme 1.5 litra uje te ftohte dhe e rregullojme me kripe e piper. E leme te zieje perberja derisa mishi te jete zier.

Freír la carne hasta que esté dorada por los lados. Agregue 1,5 litros de agua fría, sal y pimienta
y deje que hierva hasta que el pavo esté listo.

While the meat is being cooked, let’s continue with the preparation of the crumbs. Take a bowl and add 3/4 of cup with tepid water, little salt, 1 coffee cup of olive oil and mix them well. Add the corn flour, wheat flour mixed with the baking powder and mix them all with the help of a big spoon. Keep mixing until the we gain a soft compact dough. Spread the dough by hand into the pie-pan pre-lubricated with olive oil, stab it with the fork, in order for the dough to let off the steam during baking, and lubricate on top with olive oil. Bake it in pre-heated oven for 45 minutes at 240. / Nderkohe qe mishi zien, fillojme pergatitjen e kulacit per persheshin. Ne nje tas hedhim 3/4 gote uje te ngrohte, pak kripe e 1 filxhan kafeje vaj ulliri dhe i trazojme bashke. Shtojme miellin e misrit, miellin e grurit te perzier me fryresin dhe e trazojme te gjithe perberjen mire e mire me luge derisa te behet nje brume jo i forte. E shtrojme brumin me dore ne tepsine e lyer me vaj ulliri dhe e shpojme me pirun qe brumi te shfryhet gjate pjekjes. E lyejme edhe lart me vaj ulliri. E veme te piqet ne furre te parangrohur per 45 min me 240 grade.

Preparación de migas: Poner es un tazón 3/4 de taza de agua tibia, sal y una taza de café con aceite de oliva. Mezcle bien y agregue harina de maíz, harina de trigo mezclada con polvo de hornear. Mezclar bien con la ayuda de una cuchara grande y preparar una masa suave. Extienda a mano la masa en el molde para pasteles, extiéndala con un tenedor y lubrique con aceite de oliva. Hornear durante 45 minutos en horno precalentado a 240ºC.

As soon as the pie is baked, bring it out of the oven and chop it by hand to obtain the crumbs. Do as many crumbs as you may need for the people dinning, the rest of the pie could be consumed with white cheeses, tomatoes, olives, etc. / Presim derisa kulaci te piqet, e nxjerrim mga furra dhe e copetojme ne copat te vogla. Nuk eshte e thene qe ta besh te gjithe kulacin pershesh, pasi ai eshte shume i shijshem per t’u ngrene edhe me vete (shikoni artikullin “Kulac me Miell Misri – Recete nga Nena XHENI”).

Cortar el pastel al horno en trozos pequeños, para obtener las migas. Forma todas las migajas según sea necesario para la comida, te resto del pastel te podría ser comido con queso blanco, tomates y aceitunas.

As soon as the turkey is ready, remove the meat and bake it for 40 minutes at 250. Check the amount of the turkey broth, for this recipe is needed the ratio 1:1 (crumbs and broth), and check if it has enough salt. Remove the broth from heat and add there the prepared crumbs and fresh spearmint leaves. Grandma Xheni use them as whole, you may shred them if you want to. / Nderkohe shohim nese eshte zier mishi. I heqim copat e gjelit te detit dhe i veme te piqen me 250 grade per 40 minuta. Lengun e mbetur e rregullojme qe te kete te njejten sasi me kulacin e thermuar (menyra me e thjeshte eshte te perdorni si mase tasin ku keni thermuar kulacin. E kontrollojme serisht per kripe qe persheshi te dale me shijen e duhur. E heqim nga zjarri dhe shtojme aty kulacin e thermuar dhe gjethet e nenexhikut te fresket. Nena Xheni i fut sic jane, pa i prere; ju mund t’i grini te vogla nese doni.

Retire el pavo de su caldo y hornee durante 40 minutos a 250ºC. Regule la cantidad de caldo a una proporción
de 1: 1 con las migajas. Retire el caldo del fuego, añadir las migas y las hojas de menta verde fresca.

Cover the pan and let the crumbs still until they absorb the broth (not more than 20 minutes). Place the crumbs nicely in a plate and add the baked turkey aside. Prepare a green salad with fresh vegetables to complete the meal. Bon Appetite! / I veme kapakun dhe e leme persheshin ne qetesi derisa kulaci ta kete thithur lengun (jo me shume se 20 minuta). Tashme persheshi eshte gati per t’u servirur. E vendosim me forme te rregullt ne pjate te shoqeruar nga mishi i pjekur. Gjithashtu, per te plotesuar vaktin e shoqerojme me nje sallate jeshile e zbukuruar me pak perime te fresketa. Ju befte mire!

Prepare una ensalada verde con verduras frescas para completar la comida.
Cubra la cacerola y dejar que las migajas quieto hasta que absorben el caldo (no más de 20 minutos). Coloque las migajas muy bien en un plato y añadir el pavo al horno a un lado. ¡Buen provecho!
