How to Prepare the Best Delicious Vegetarian Dish / Si te Gatuajme Fergese Vegjetariane Dimerore

Today’s recipe is a vegetarian one. I like this dish especially during cold winter as it has a fresh delicious taste. It is a light dish too. Here I go with the recipe: / Receta e sotme eshte vegjetariane dhe mua me pelqen ta gatuaj ne stinen e ftohte, sepse ka nje shije te fresket e te mrekullueshme. Gjithashtu eshte edhe nje gatim i lehte. Pa humbur kohe po filloj me receten:

Ingredients: / Perberesit:

300 gr red sweet peppers/ 300 gr speca te kuq

300 gr green peppers / 300 gr speca jeshile

1 – 2 eggplants / 1 – 2 patellxhane

500 gr tomatoes / 500 gr domate te pjekura mire

100 gr feta cheese / 100 gr gjize me kripe ose djath te bardhe

1 egg / 1 veze

1 garlic cockroach, average size / 1 hudher mesatare

1 medium white (yellow) onion/ 1 qepe mesatare

1 bunch of fresh parsley / 1 tufe majdanoz i fresket

Oregano / rigon i thate

Salt, white pepper, olive oil / kripe, piper i bardhe, vaj ulliri

Preparation: / Pergatitja:

Wash vegetables with abundant water and dry them up. Chop peppers at the size of a normal bite, and fry them. When peppers are near end of frying, cut the eggplants in circles 1 cm wide and fry them in the same pan. Remove them from the pan and together with peppers leave aside to cool down. Chop the onion in small cubicals and add them to the same pan you fried peppers and eggplant. Add a little of olive oil if is needed to fry the onions. Attention! Do not use lots of oil at this phase of the cooking, as other fried vegetable do have oil too. / Lajme perimet me uje te bollshem dhe i thajme me leter kuzhine. I presim specat ne permasat e nje kafshate dhe i skuqim ne nje tigan me vaj. Kur specat jane drejt fundit, presim patellxhanet ne rrathe rreth 1 cm te gjere dhe i skuqim ne te njejtin vaj. Kujdes! Nese patellxhanet jane te hidhur, ato duhet prere dhe futur ne uje me kripe per te pakten 1 ore qe t’iu hiqet shija e hidhur. Pasi perfundojme skuqjen e patellxhaneve, ne vajin e mbetur shtojme qepen te prere ne kube te vogla. Nese vaji i mbetur ne tigan nuk eshte i mjaftueshem per te gatuar qepet, shtoni paksa vaj ulliri. Kujdes! Mos e teproni me vajin ne kete faze se edhe perimet e skuqura kane thithur pjesen e tyre te vajit dhe mund te rrezikoni ta teproni ne fund me sasine e vajit ne fergese.

Fry the onion until is shriveled. Add peeled & chopped tomatoes and peeled & shredded garlic. Mix well the preparation and let it simmer until it losses most of the juice. Add the shredded feta cheese and the fried vegetables (peppers and eggplants). Regulate with salt, pepper and dried oregano. Let the dish simmer for two more minutes and remove it from the heat. In a separate glass stir the egg and thinly shredded fresh parsley. Add it to the dish and mix fast in order for the egg to spread uniformly. Serve it nicely in a soup plate and decorate on top with small parts of fresh parsley leaves. The Delicious Vegetarian Dish goes well with White Rice or Wheat Oatmeal. Bon Appetite! / Skuqeni qepen derisa te vyshket dhe shtoni domatet e qeruara e te prera ne kubike te vegjel. Shtoni edhe hudhren e qeruar dhe te grire imet. Perziejeni perberjen dhe lereni te zihet derisa te jete avulluar shumica e lengut. Shtojme djathin e thermuar ose gjizen te tretur ne pak uje, si edhe specat dhe patellxhanet e skuqur. E perziejme me kujdes gjellen, e rregullojme me kripe, piper dhe pak rigon te thate. E leme te zieje edhe per 2 minuta te tjera dhe e heqim nga zjarri. Ne nje gote trazojme vezen me majdanozin e fresket te grire imet. E shtojme kete perberje te fergesa, duke e perzier shpejt ne menyre qe veza te shperndahet ne menyre uniforme. Sherbejeni fergesen ne nje pjate te thelle dhe zbukurojeni me copa gjethesh majdanozi te fresket. Kjo fergese dimerore shkon shume me pilaf apo me bollgur. Ju befte mire!
