How to Prepare Healthy Vegetarian Soup with Lentils / Supa e Shendetshme me Thjerreza dhe Perime – Recete nga Nena XHENI

Lentils Soup is a fantastic recipe recommended today for you by Grandma Xheni. It is a light, delicious and very healthy soup, especially for little kids, as it is rich in iron and lots of vitamins and minerals. This is a vegetarian recipe, easy-to-prepare all year long and could be prepared with fresh seasonal vegetables, thus offering us different tastes anytime we prepare it. Here I go with the recipe: / Supa me thjerreza eshte receta fantastike, qe Nena Xheni ka sjelle sot per ju miq te dashur. Eshte nje supe shume e shendetshme, e lehte dhe shume e shijshme. Rekomandohet vecanerisht per femije te vegjel, pasi permban hekur, dhe shume vitamina e kripera minerale. Kjo recete vegjetariane, e lehte per t’u gatuar, mund te pergatitet gjate gjithe vitit dhe cdo here mund te perdorni perime te fresketa sezonale, duke iu dhuruar shije te ndryshme. Ja ku po filloj me receten:

Ingredients: / Perberesit:

1 cup of lentils / 1 filxhan caji thjerreza

1 big white onion / 1 qepe e madhe

2 average tomatoes / 2 domate mesatare

1 small eggplant / 1 patellxhan i vogel

1 green pumpkin / 1 kungull jeshil i vogel

1 red pepper / 1 spec i kuq i embel

1 green pepper / 1 spec jeshil

1 yellow pepper / 1 spec i verdhe

2 patatoes / 2 patate mesatare

1 carrot / 1 karrote mesatare

2-3 cloves of garlic / 2 – 3 thelpinj hudhre

salt, white pepper, oregano, olive oil / kripe, piper i bardhe, rigon i thate, vaj ulliri

Today’s recipe is prepared with green lentils, the ones shown in the photo. Grandma Xheni recommends to use red lentils when preparing this soup for little babies, as they contain more iron. In case you’ll use red lentils, you do not need to previously leave them in water, and they will be poured out in the soup.
/ Receta e sotme eshte pergatitur me thjerreza jeshile, keto qe shihni ne foto. Nena Xheni rekomandon qe kur gatuani per bebe te perdorni thjerrezat e kuqe, pasi ato jane me te ushqueshme dhe me te pasura me hekur. Kur gatuani me thjerreza te kuqe, mbani parasysh se ato nuk kane nevoje te lihen ne uje paraprakisht dhe se gjate zierjes ato shperbehen ne lengun e supes, pra pamja e supes mund te mos jete njesoj e bukur.

Preparation: / Pergatitja:

The night before, place the lentils into a bowl of cold water. Wash vegetables (apart onion, tomatoes and potatoes) with abundant water, peel and chop them in small cubicles, in the same place. Pour 2 soup spoons of olive oil in a pan, add chopped onions, very little salt and cook until shriveled. Add chopped potatoes into the pan and stir well until potatoes are half cooked. Add the rest of vegetables and let them cook together stirring continuously. Add tomatoes and allow for the preparation to cook until the cubicles of tomatoes are poured out. If the soup is missing oil (as vegetables drain it) add one more soup spoon of olive oil. Add drained green lentils. / Nje nate perpara, fusim thjerrezat ne uje te ftohte dhe i leme gjithe naten. Lajme perimet (pervec qepes, domateve dhe patateve) me uje te bollshem, i qerojme dhe i grijme ne copa te vogla, te gjitha ne te njejtin vend. Grijme qepen dhe e hedhim ne nje tenxhere me 2 luge supe vaj ulliri dhe pakez kripe. E gatuajme derisa te vyshket, shtojme patatet e qeruara dhe te grira ne kubike te vegjel. I leme te skuqen sebashku derisa patatja te jete ne gjysem e gatuar, shtojme te gjitha perimet e tjera. I leme te kavardisen mire sebashku dhe sapo ndryshojne ngjyre shtojme domaten te qeruar e te prere ne kubike te vegjel. Nese shohim se supa nuk ka vaj (pasi e thithin perimet), i shtojme nje luge tjeter me vaj ulliri dhe i leme te gatuhen derisa domatja te shkrihet. Shtojme thjerrezat e kulluara nga uji.

Decant the lentils and add them to the pan where you’ve cooked the other vegetables.
/ Kulloni thjerrezat nga uji dhe shtojini tek tenxherja ku po gatuhen perimet e tjera.

Allow the preparation to cook for 5 more minutes, by stirring occasionally. Pour cold water until the vegetables are fully covered and three centimeters more over their level. Allow for the soup to simmer until the lentils are made, do not forget to stir it time after time, not to allow the soup to stick. Regulate the preparation with salt, white pepper and oregano. Let it simmer for 2 more minutes and should the soup have the desired consistency, remove it from fire. Should your like the soup thicker, allow it to simmer a bit more. On the other side, should you prefer your soup to be more liquid, add some hot water in it. Allow for the soup to cool down for 5 minutes and serve it nicely in a soup plate, decorating it with fresh parsley. You may squeeze fresh lemon juice on your plate, as desired. Bon Appetite! / I gatuajme perberesit per 5 minuta dhe shtojme uje te ftohte deri 2 gisht mbi nivelin e perimeve. I leme te ziejme derisa thjerrezat te gatuhen plotesisht. Gjate kohes, supa duhet te trazohet vazhdimisht qe te mos ngjise. E rregullojme me kripe, piper dhe rigon te thate. I leme te gatuhen edhe 2 minuta te tjera dhe nese supa ka arritur trashesine e deshiruar e heqim nga zjarri. Nese deshironi nje supe me te trashe, lereni te zieje edhe pak qe te trashe lengun. Ne te kundert, nese deshironi nje supe me te lengshme, shtoni pak uje te nxehte ne te. E leme te ftohet per 5 minuta dhe e servirim bukur ne pjate, duke e zbukuruar me majdanoz te fresket. Sipas deshires, mund t’i shtrydhni pak leng limoni ne pjaten e supes. Ju befte mire!

You may change the vegetables of this soup as per your own desire (spinach, beets, green beans, beetroot, leeks, cabbage, asparagus, celery, etc). Make sure to always add balanced amount of vegetables in the soup, as the secret of its amazing taste is the balanced taste of different vegetables.
