How to Make a Fantastic Delicacy: Black Sweet Sauce / Mushti Special nga Manat e Zinj – Recete nga Nena Xheni

Since some years now, Grandma Xheni and myself like to experiment in preparation of sweet sauces from different fruits. This year we transformed raw black berries (not sweet, neither juicy) into a fantastic delicacy: Black Sweet Sauce. It is a succulent preparation, easy-to-prepare and that find lots of usage in the kitchen. Here I go with the recipe: / Po behen disa vite tashme qe une dhe Nena Xheni na pelqen te eksperimentojme me pergatitjen e mushtit te frutavete ndryshem. Kete vit ishte rradha e manave te zinj te eger (jo te embel dhe aspak te lengshem ne te ngrene) per t’u transformuar ne nje delikatese te mrekullueshme: Salca e Zeze e Embel. Kjo eshte nje pergatitje veshtullore e lengshme, e lehte per t’u bere dhe gjen shume perdorime ne kuzhine. Ja ku po filloj me receten:

Ingredients: / Perberesit:

3 kg of fruits from Mulberry Darkie Tree / 3 kg mana te zinj

750 gr Brown sugar / 750 gr sheqer kaf

Preparation: / Pergatitja:

Wash the fruits of Mulberry Darkie with abundant water and let them drain the water away. With the help of a squeezer machine, squeeze the black berry fruits three times, to make sure we’re getting as much fresh juice as possible. Pour the juice into a stew-pan that does not stick, add sugar, stir until the sugar is melted and let it simmer in moderate heat. Let me clarify something about the amount of sugar needed for this recipe: it depends on how sweet your want the sauce to be. Grandma Xheni advice is to start with 500 gr of sugar at first, and check the level of sweetness during preparation. If needed you can add more sugar spoon after spoon. / Lajini manat e zinj me uje te bollshem per t’iu larguar pluhurin dhe lerini te kullojne ujin e tepert. Shtrydhini manat me nje makine shtrydhese ushqimore. Une i kalova 3 here per t’u siguruar qe te nxjerr sa me shume leng nga manat (si edhe per te mos bere pis, pasi bersite e mbetura e rrjedhin lengun tek qesja e plehrave). Hidheni lengun ne nje tenxhere qe nuk ngjit, shtojini sheqerin, vereni ne zjarr mesatar dhe perzijeni derisa te shkrihet sheqeri. Persa i perket sasise se sheqerit, qe nevojitet per salcen, Nena Xheni keshillon te filloni me 500 gr sheqer dhe gjate pergatitjes te provoni embelsine e mushtit. Nese duhet mund te shtoni perseri sheqer, duke e hedhur luge pas luge.

Occasionally, stir the preparation until it takes the desired thickness. To make a comparison, the sweet black sauce (still on the heat) should be as thick as the crepes’s dough. Attention! After cooling down the sauce will be thicker a bit more and will get the right thickness. Remove the stew-pan from the heat and leave it to cool down completely. Conserve it into glass jars into the refreshing compartment of your fridge. / Perziejeni mushtin here pas here derisa te arrije trashesine e duhur. Sa per te bere nje krahasim: mushti duhet te jete i trashe sa brumi i krepave, teksa eshte ende ne zjarr. Gjate ftohjes salca e zeze e embel do te trashet edhe pak dhe do arrije trashesine e duhur. Hiqeni tenxheren nga zjarri dhe lereni pergatitjen te ftohet plotesisht. Ruajeni deri ne 1 vit ne ene qelqi ne pjesen freskuese te frigoriferit.

As Delicacy with Fresh Feta Cheese / Si Delikatese Me Djath te Njome

It is better if the cheese in little salty. This preparation offers a special delicious taste to be enjoyed as a light desert at the end of a meal. You’ll remember me when tasting such delicacy.

/ Krepi ne foto eshte dekoruar qe te jete nje ‘krep i vogel i gezuar’ me floke te zinj (salca e zeze e emebel na mundeson qe te argetojme vajzen time te vogel me ‘sajesa’ te tilla).
