This is one of the best recipes Grandma Xheni makes our of fresh chicken. It has delicious taste, beautiful colors and is very healthy. Grandma Xheni prepares it for special occasions like: family Sunday gathering or when she is in good mood to prepare an extra good meal. Here I go with the recipe:

- 1 entire chicken / 1 pollo entero
- 1 kg potatoes / 1 kg de papas
- 2 carrots / 2 zanahorias
- 1 cup of peas / 1 taza de guisantes
- 2 tomatoes / 2 tomates
- 2 yellow onions / 2 cebollas amarillas
- 1 glass of white wine / 1 vaso de vino blanco
- 1 soup spoon of unsalted butter / 1 cucharada sopera de mantequilla sin sal
- Salt, white pepper, oregano, olive oil. / Sal, pimienta blanca, orégano, aceite de oliva.
Preparation: / Preparación:
Peel the onions and cut them in small cubicles. Put them in a stew-pot (non-sticky) with little salt and 1 soup spoon of olive oil and butter. Fry the onions until shriveled and add the chicken divided into portions. Fry the chicken until the meat changes color and add white wine. Allow for the preparation to simmer a bit and add tomatoes, peeled and cut into small cubicles.
Fry the preparation until the tomatoes start to shrivel, then add filtered water until chicken is entirely covered. Allow the preparation to simmer until the chicken is softened.
Meanwhile, peel the potatoes and cut them into big cubicles. Fry them a bit, remove from fire and spread them into the baking-pan sprinkling them with salt, white pepper and oregano. Peel the carrots, cut them into circles of 0.5 mm, fry them a bit and spread them over the potatoes; sprinkle with little salt and oregano. Fry the peas a bit, and spread them on top of the other vegetables. Sprinkle with salt, white pepper and oregano.
Remove the stew-pot from the heat and place the chicken portions on top of the vegetables at the baking-pan. Add the chicken broth prepared until the half of the vegetable layer. Put it in pre-heated oven for 40 minutes with 250. When the chicken portions are made on one side, turn them into the other side. Finally the Chicken Ala Mediterranean is ready to be served.
Nicely serve the Chicken Ala Mediterranean into a big plate serving portion of the chicken with some vegetables. I recommend White Cold Soup to be a first plate for this recipe.
