Everyone knows Lasagna with Meat Sauce, the classic one. I like it very much and I always cook it in Italian style. This recipe was inspired by the classic lasagna, but I modified it to make it lighter and healthier using greens as main ingredient for the filler. Allow me to show you how this is done.
Ingredients: / Ingredientes:
- 6 types of greens 150 gr/each (nettles, pazi, poppy leaves, docks, spinach, sorrel) / 6 tipos de verduras 150 gr / cada una (ortigas, pazi, hojas de amapola, muelles, espinacas, acedera)
- 5 green onions / 5 cebollas verdes
- 3 eggs / 3 huevos
- 2 cups of milk / 2 tazas de leche
- 1 bunch of fresh parsley / 1 manojo de perejil fresco
- 1 bunch of fresh dill /1 manojo de eneldo fresco
- 200 gr. feta cheese / 200 gr. queso feta
- 100 gr of cheese for pizza / 100 gr de queso para pizza
- 30 gr. wheat flour / 30 gr. harina de trigo
- 12 lasagna foils / 12 láminas de lasaña
- Salt, white pepper, olive oil / Sal, pimienta blanca, aceite de oliva.

As soon as the filler with greens is ready we start with the preparation of the lasagna foils. I used ready foils that I buy in the shop, but the lasagna foils could be prepared by yourself as well. Both ways the procedure is like this. Boils some water in a wide fry -pan and plunge there the first layer of the lasagna foils. My glass baking-pan requires 3 foils. Allow for the lasagna foils to soften a bit, than remove them from the heat. Lubricate the end of the baking-pan with some olive oil and cover it with the softened lasagna foils. Cover the lasagna foils with one layer of filler with greens spread uniformly.
Use your hands to minced 1/3 of feta cheese and spread it all over the filler with greens. Repeat the softening procedure with other lasagna foils and cover the filler fully with lasagna foils.
Repeat the same procedure with two more layers of filler. You’ll end up with your baking-pan filled with three layers of green filler and four layers of lasagna foils. Attention! the green filler will be little juicy. Make sure to add this juice to the last layer of green filler.
Preparation of the Béchamel Sauce: / Preparación de la Salsa Béchamel:
In a non-stick pan fry the wheat flour until the flour starts to turn color. Add one cup of fresh milk and continue stirring until the milk and flour will create a uniform preparation. At the moment the béchamel sauce is thickened enough, remove it from fire and add one full egg stirring very fast. Spread the béchamel sauce uniformly over the lasagna foils. Cover lasagna with cheese for pizza and bake it in pre-heated oven for 45 minutes at 200.
Lasagna is ready when the upper layers is turned into light-brown, similar to a pizza. Cut Special Vegetarian Lasagna with greens in portions and nicely serve them into a plate. Bon Appetite!
