This one is one of my original recipes. My daughter likes kidneys a lot, so I experiment different ways of cooking them. Today, I found some inspiration to prepare this new recipe, which fortunately came up to be fantastic. So, I decided to share it with you dear friends. Here I go with the recipe:

- 1 kidney of the calf / 1 riñón de ternera
- 4 red sweet peppers / 4 pimientos rojos
- 1 small garlic / 1 ajo pequeño
- 200 gr. peas / 200 gr. de guisantes
- 50 gr unsalted butter / 50 gr de mantequilla sin sal
- 1 cup of oatmeal / 1 taza de avena
- 1 laurel leaf / 1 hoja de laurel
- Fresh parsley / Perejil fresco
- Salt, white pepper, olive oil. / Sal, pimienta blanca, aceite de oliva.
Preparation: / Preparación:
Wash the peppers with abundant water and cut them into 5 – 7 mm belts. Fry peppers with 2 tablespoons olive oil. Once the peppers have reached the right temperature, add the kidneys cut into medium pieces. Attention! When cutting the kidney keep its outer shapes intact so that the dish will look good on serving. Add garlic as well as 1 laurel leaf.
Fry them all together until the kidneys change color. Add oatmeal and about 50 grams of unsalted butter.
Stirr the mixture until it unifies and the oatmeal is fried a bit. Add the peas.
Allow for the peas to fry a bit and add 2 cups of warm water (in ration 1: 2 with oatmeal). Stir well the preparation, regulate with salt and white pepper and let it simmer over medium heat for 30 minutes. 5 minutes before the end of preparation add finely chopped fresh parsley. Serve the Oatmeal & Vegetable Kidneys on a plate by nicely placing the kidneys and peas between them.
This is simple and healthy recipe, suitable for a light dinner, or as a first plate for a full meal. Make sure to choose fresh vegetables for this recipe. I invite you to try this recipe at our home. Let me know your impressions about it. Till then:
