How to make Healthy Meatballs with Spinach Stems

Spinach is one of the most delicious and healthy vegetables. I like spinach stems in particular. In my opinion, they taste better than spinach leaves. Therefore, I use spinach stems for various vegetable soups, but also to make very delicious meatballs, especially for little kids. Today I will share with you the recipe of the Healthy Meatballs with Spinach Stems. They are the preferred vegetarian meatballs of my daughter. I go with the recipe:

Ingredients: / Ingredientes:

  • Spinach stems (taken from 600 gr spinach plants) / Tallos de espinacas (tomados de plantas de espinacas de 600 gr)
  • 1 cup of milk / 1 taza de leche
  • 1 egg / 1 huevo
  • wheat flour / harina de trigo
  • oregano / orégano
  • spearmint / menta verde
  • 1/2 bunch of fresh dill / 1/2 manojo de eneldo fresco
  • 1/2 bunch of fresh parsley / 1/2 manojo de perejil fresco
  • Salt, pepper, olive oil. / Sal, pimienta, aceite de oliva.

Preparation : / Preparación:

Peel the spinach’s stems from rotting roots and perishable parts and washes them with abundant water. Thinly cut the stems with a knife. Add a little salt and knead them with hand until the stems do not scoop anymore.

Pela los tallos de las espinacas de las raíces podridas y las partes perecederas y lávalas con abundante agua. Corte finamente los tallos con un cuchillo. Agregue un poco de sal y amase con la mano hasta que los tallos ya no se raspen.

Add the milk to the spinach’s stems and mix well with the spoon.

Add seasonings (spearmint, oregano, pepper, minced parsley and minced dill). Add the egg and mix all the mixture until uniform. Fix it with salt. Attention! Little kids should not consume too much salt, so the meatballs should have little salt.

Agregue los condimentos (menta verde, orégano, pimienta, perejil picado y eneldo picado). Agregue el huevo y mezcle toda la mezcla hasta que quede uniforme. Arreglarlo con sal. ¡Atención! Los niños pequeños no deben consumir demasiada sal, por lo que las albóndigas deben tener poca sal.

How to bake these Vegetarian Meatballs with Spinach Stems / Cómo hornear las albóndigas con tallos de espinacas

Put the prepared dough in the form of mini cakes coated with olive oil. Another way is to wear mini-cake forms with baking paper.

Ponga la masa preparada en forma de mini pasteles recubiertos con aceite de oliva. Otra forma es usar formas de mini pasteles con papel de hornear.

Bake the mini-cakes of spinach stems for about 45 minutes at 200 grades. Attention! You know better your oven, thus allowing for the mini-cakes to bake for as long as necessary. To check if the cakes are ready, sticking them in the middle of a toothpick. If the stake comes out clean, the cake is baked. Another way to finish the meatballs is to use a frying pan to fry them. But, but this method is not very healthy and is not recommended for children.

Place the spinach stems’ mini-cakes (meatballs) on a small plate and just leave them on the table. Your kids will not delay to enjoy them -:)
