Today’s recipe is very healthy, requires few ingredients and easy-to-make. It allows you to use celery leaves, a plant well known for its nutritional values. Grandma Xheni prepares this soup often, as it has a fresh taste and is very healthy. Here I go with the recipe:

- 4 rations turkey / 4 raciones de pavo
- 500 gr of celery leaves / 500 gr de hojas de apio
- 1 onion / 1 cebolla
- 1 egg / 1 huevo
- 1 lemon / 1 limón
- Salt, olive oil. / Sal, aceite de oliva.

Wash the celery leaves with abundant water. Then, immerse for 5 minutes in cold water with 2 tablespoons of apple cider vinegar. Boil the celery leaves for 4 minutes in salted boiled water. Drain them and leave them aside. Attention! Grandma Xheni prefers to leave the celery leaves uncut. If you wish, you can cut them into thin strips before boiling them.

In a stew-pot add two tablespoons of olive oil and chopped onion in small cubes. Add little salt too. Fry the onion until shriveled. Add the pieces of turkey. Attention! This recipe can be prepared with either beef or chicken. It tastes great and has excellent nutritional value with all three types of meats.
Fry the meat until its color is changed and cover it with cold water. Let it cook until the meat is ready, so the fork enters and freely comes out of the turkey. Add the prepared celery leaves. Let the soup boil twice and adjust with salt.
In a glass break the egg and squeeze the lemon juice. Stir them together until we have a homogeneous mixture. Remove the soup from the fire and add the egg to the lemon, stirring quickly to prevent the egg from clotting. To achieve proper taste, make sure the soup is not very juicy. Optionally, near the end of cooking, you can even chop the meat in small pieces or put the soup in the blender. This would be especially handy when you are serving the soup for small children.
