I love homemade pizza, even though I hardly find enough time to make it very often. But, as we are living under quarantine these days, I found the time to prepare one. And, it is my preferred one: Sausage & Vegetable Pizza. It is not an usual pizza you’ve used to buy at a Pizzeria. It is an ‘exaggerated’ homemade version, that I hope you’ll like. Here I go with the recipe:

- 150 g sausage (not too spicy for me) / 150 g de salchicha (no demasiado picante)
- 1 pumpkin / 1 calabaza
- 1 carrot / 1 zanahoria
- 1 eggplant / 1 berenjena
- 1 red onion (with thick pulp) / 1 cebolla roja (con pulpa gruesa)
- 1 red sweet pepper / 1 pimiento rojo
- 3 – 4 field mushrooms / 3 – 4 setas de campo
- 15 cherry tomatoes / 15 tomates cherry
- 3 tomatoes / 3 tomates
- 200 gr of pizza cheese / 200 gr de queso pizza
- 1 garlic clove / 1 diente de ajo
- 400 gr of wheat flour / 400 gr de harina de trigo
- 10 g of yeast / 10 g de levadura
- Salt, white pepper, oregano, parsley, olive oil. / Sal, pimienta blanca, orégano, perejil, aceite de oliva.

Preparation of the Pizza Dough / Preparación de la Masa de Pizza
Start with the preparation of the pizza dough. In a large bowl pour little salt, 10 gr of dry yeast and 1 coffee cup of tepid water. Mix them until ingredients are melted. Add the wheat flour and work it by hand until it becomes softer than the pie dough. Cover with plastic paper and leave in a warm place for at least 3 hours. The pizza dough must double its volume before it is ready to be used for the pizza preparation.
Preparation of the Tomato Sauce / Preparación de la Salsa de Tomate
Once the dough has swelled to double volume, we start with the preparation of the pizza sauce. Peel the mushrooms and cut them into 5 mm straps. In a saucepan pour 1 soup spoon of olive oil and 1 clove of garlic. Once the oil is warmed and flavored, remove the garlic and add the mushrooms. As soon as the mushrooms change color, add tomatoes peeled and cut into medium cubicles. Add half sliced cherry tomatoes. Stir the mixture well and when the tomato is melted pour some water (depending on how liquid the tomato itself is), a little oregano, salt, and white pepper. Continue stirring until the sauce has removed all the water and is consistent. Remove it from the fire and leave it aside.

Preparation of Pizza / Preparación de Pizza
In the meantime, work the pizza dough, and with oiled hands, lay it on the pizza pan uniformly. Spread the Tomato & Mushroom Sauce on top and spread the sausage cut into circles 4 mm thick.
Wash and peel other vegetables, and cut them to the size of a bite. The peppers and onions are cut in circles of 5 mm thickness. Place the vegetables on the pizza as in the picture. Add little shredded parsley.
Cover the pizza with pizza cheese. I use high-quality German cheese, which is sliced. As per your preference, you can also use grated pizza cheese. Attention! Pizza cheese is very healthy for the heart, as it contains a very necessary element for its work, the K element.

Put the pizza in the preheated oven for 45 minutes at 200. Attention! Place the pizza bottom floor of the stove so that it can bake up and down simultaneously. The look of baked pizza looks like this in the picture.
Cut the finished pizza into portions and place it in the middle of the table so that everyone gets as much as they want. The baking-pan I used is a square shape, so my pizza portions were rectangular. Using a non-stick round pizza-pan will make your pizza look just like the ones we are used to enjoying the best pizzeria.
